Mash

The process that converts starches in the grains to sugar. These sugars will be fermented by the yeast, resulting in the alcohol in the beer.
Mashing combines crushed malted barley and hot water. Malted barley is a barley seed that has just started to germinate before being stopped. The starchy barley kernel produces a host of starch-degrading enzymes. The enzymes convert the starch into maltose.
